  1. Crack the eggs into a bowl and whisk them together with a pinch of salt and pepper untill the whites and yokes are fully incorporated.
  2. Heat a small non-stick pan over medium heat and add butter. Once melted tilt the pan to ensure the butter covers the entire surface.
  3. Pour the egg mixture into the pan and let it cook for about 1-2 minutes, until the edges start to set.
  4. Add your desired fillings to one half of the omelette and sprinkle with a bit more salt and pepper if needed
  5. Use a spatula to gently lift the edges of the omelette and tilt the pan so the uncooked egg can flow underneath.
  6. Once the eggs are almost set, use the spatula to fold the other half of the omelette over the fillings.
  7. Cook for an additional 30 seconds to 1 minutes, untill the eggs are fully set and the cheese is melted (if using).
  8. Slide the omelette out of the pan onto a plate and serve hot.
